Ingredients:
Slaw:
2 small or 1 medium zucchini, coarsely shredded and well drained
1/4 cup finely chopped onion
1 cup coarsely shredded carrot
Dressing:
3 TBSP mayo
1 TBSP apple cider vinegar
1/2 TSP sugar
1/4 TSP salt & pepper to taste.
Instructions:
Mix dressing ingredients, toss in veggies. Cover & refrigerate for at least 1 hour. Serve.
