Beans date back to the early seventh millennium BCE and are one of the longest-cultivated plants in history. They have sustained civilizations for thousands of years. There are approximately 40,000 known bean varieties spread across the globe with only a small fraction of them are mass-produced for our grocery store shelves. If you're looking for a great place to start, try focusing on these fan favorites:

  1. Chickpeas are considered the super-snack. Also known as garbanzo beans, these beans are an absolute powerhouse. A single cup of cooked chickpeas packs a whopping 12.5 grams of fiber, 71% of your recommended daily intake (RDI) of folate, and 26% of your RDI of iron. Chickpeas are especially good in stews, salads, or even roasted in the air fryer.

  2. Black, Pinto, and Kidney Beans are a Comfort Classics. They are perfect in a hearty chili and slow-cooked stews. They absorb flavors beautifully, making them perfect for simmering with garlic, onions, and spices.

  3. Lentils and Split Peas are quick cooking beans. Their small size makes cooking these beans incredibly fast, making them perfect for quick weekday soups.

Beans are a significant source of protein. If you're looking for complex carbohydrates, folate, fiber, and iron, eat some beans. They are excellent sources for each of those. A very healthy choice for any meal or snack, they are also an excellent source of fiber, low in fat and high in complex carbohydrates, folate, and iron. With so many choices, celebrating with beans should be a delicious success!
