Zucchini Pizza with Bleu Cheese Sauce

Ingredients
1 lb zucchini
salt
1 tablespoon olive oil
1 clove garlic, minced
4 ounces bleu cheese, crumbled
1/2 cup parmesan cheese, grated, divided
8 ounces cream cheese, softened
1 cup heavy cream
1 tablespoon Italian seasoning
Salt and pepper to taste
1 lb dough – enough for one 12-inch pizza
Instructions
Heat oven to 425°F.
Slice zucchini into 1/8 inch slices. Place on a paper towel and sprinkle both sides with salt. Allow the pieces to rest for 30 minutes.
Prepare the dough. If using a mix or homemade recipe, follow the instructions. Spread the dough on an oiled baking sheet. Par-bake the dough for 5 minutes. When using a prepared crust, do not par-bake.
In a medium skillet, add garlic and olive oil. Cook over medium heat until garlic is fragrant. Add bleu cheese, 1/4 cup parmesan, cream cheese, and cream. Cook until cheese is melted. Stir in Italian seasonings and add salt and pepper to taste.
Spread the sauce over the crust.
Pat the zucchini dry, removing any released moisture. Layer the zucchini onto the crust. Sprinkle with remaining parmesan. Bake for 10-12 minutes or until cheese is golden brown.
