Name: Yogurt Spinach Mashed Potatoes

6 medium potatoes
4 quarts water
2 cups fresh spinach
2 tablespoons butter
2 cloves garlic, minced
1 cup plain non-fat Greek yogurt
4 ounces reduced-fat cream cheese, softened
Salt and pepper to taste
Peel and cube potatoes. Bring water to a boil and season with salt. Add potatoes and boil until tender.
While potatoes are boiling, melt butter in a medium sauce pan over medium heat. Add garlic and cook until fragrant. Mix in spinach leaves and cook until wilted.
Drain potatoes and return to pot. Add spinach mixture, yogurt, and cream cheese. Mix well. Season with salt and pepper.
