Vegetable Soup

1 onion, diced
1 clove garlic, minced
1 tablespoon butter
1 14-ounce can chicken broth
1 11.5-ounce can tomato juice
1 cup water
1 large potato, diced
2 carrots, sliced
2 stalks celery, sliced
1 14.5 ounce diced tomatoes
1 cup frozen green beans
1 cup frozen corn
1 bay leaf


In a large stockpot, melt butter over medium-high heat. Add onions and cook until translucent. Add garlic and cook until fragrant. Stir in the remaining ingredients and bring to a boil. Reduce heat and allow to simmer for 30 minutes. Remove bay leaf before serving.
