UNBELIEVABLY EASY HONEY MUSTARD CHICKEN

2 lb bone-in, skin-on chicken thighs
1 tablespoon butter
1/3 cup mustard (I use yellow mustard)
2/3 cup honey
1 teaspoon salt
1 teaspoon pepper
1/4 tsp cayenne (or 1/8 tsp red pepper flakes)
Preheat the oven to 375° F and spray a casserole dish with cooking spray.
Melt butter in a small bowl and stir in mustard, honey, salt, pepper, and cayenne/red pepper flakes until combined.
Place chicken thighs in prepared pan, cover with foil, and bake in preheated oven for 45 minutes. Remove foil and bake for an additional 20 minutes.
Remove chicken and place on a plate. Pour honey mustard sauce left in the pan into a serving container. Serve chicken with steamed rice and honey mustard sauce on the side.
Notes: 1) Add more or less of the cayenne/red pepper flakes to adjust for preferred level of heat. 2) The amount of sauce can be adjusted. Be sure to keep the ratio of mustard to honey at 1 part mustard to 2 parts honey.
