Tomato Basil Soup

Ingredients
1 14.5 ounce can diced tomatoes
4 cups tomato juice
1/2 cup fresh basil leaves
1 cup heavy whipping cream
1/2 cup butter
salt and pepper to taste

Instructions
In a large stockpot, cook tomatoes, and juice over medium heat. Bring to a simmer for 30 minutes. Place the mixture in a blender and add basil leaves. Puree until smooth. Return to the stockpot and add cream and butter. Cook over medium-low heat until butter is melted. Salt and pepper to taste. Serve with croutons.
