Name: Spinach Cheddar Muffin

2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups whole or 2% milk
1/2 cup vegetable oil
1 large egg
1/2 cup frozen chopped spinach, thawed, drained, and pressed dry
1 cup shredded cheese


Heat oven to 375°F with rack placed in the center of the oven. Line muffin tin with 12 paper liners or coat with cooking spray, butter, or oil.

In a large bowl, combine flour, baking powder, baking soda, and salt.

In a separate bowl, mix milk, oil, and egg.

Gradually add liquid mixture to the dry mixture, stirring until just incorporated.

Fold in the spinach and cheese.

Fill muffin cups about 1/3 full with the batter. Bake 20 minutes until a toothpick inserted into the center comes clean.
