National Day Flavor

When the gardens get planted, National Day Calendar starts thinking fruits and vegetable recipes.  This week kicks off with National Corn on the Cob Day and wraps up with National Cherry Tart Day. National Day Flavor will feature a recipe for National Strawberry Shortcake Day to get us over hump day and to make up for no spice or flavor of any kind on June 13! While sweets dominate the week, there is plenty of summer flair, so be sure to prepare your menu and pick your favorites.

National Strawberry Shortcake Day June 14


National Strawberry Shortcake Day is observed each year on June 14th.  Either on a shortcake biscuit or a sponge cake, strawberry shortcake is an easy and refreshing summertime dessert!

Strawberries are sliced, mixed with sugar then allowed to sit for about an hour until they have surrendered plenty of their juices. The shortcakes are then split, and the bottom is covered with a layer of the strawberries, juice and whipped cream.  The top is then put back on, and more strawberries, juice and whipped cream are added to finish it off.

Shortcakes aren’t only small.  These little treats are made from simple, everyday ingredients and take no time at all to make. They are delicious with more than just strawberries, too!  Because the cakes are dense, sweet, juicy berries make the best layers but don’t stop there! Shortcakes love to soak up the natural sweetness of stone fruits like peaches and apricots. Substitute mint or lavender for the lemon zest in this week’s recipe to give your shortcake a different flavor profile.


1 cup flour
3 + 2 tablespoons sugar
2 teaspoons baking powder
½ teaspoon salt

¹⁄³ cup oil
½ cup milk
zest of 1 lemon
2 cups sliced, fresh strawberries in sugar
1 cup heavy whipping cream

Preheat oven to 400° F. Mix flour, 3 tablespoons sugar, baking soda and salt in a medium bowl.  Add oil, milk and lemon zest. Drop by spoonfuls onto a baking sheet making six cakes.  Bake for 12-15 minutes or until just golden brown.

In a small bowl, whip the heavy cream and sugar into stiff peaks.

Slice each cake in half. Place layers of strawberries, juice and whipped cream on the bottom half of each cake.  Add tops.  Add more strawberries and cream.  Garnish with the last of the berries and serve.
