Swing through the baking aisle and the bakery, too. On April 13, it’s ala carte with Make Lunch Count Day, but we’ll sweeten it up with a peach cobbler. Spiral ham rounds out the week, and don’t count your eggs before they’re hatched. Well, for some celebrations they shouldn’t hatch at all. Let’s get started!

NATIONAL PEACH COBBLER DAY
National Peach Cobbler Day is observed annually on April 13. It recognizes a delicious dessert that originated during the 19th century.
Unable to make traditional suet puddings due to lack of suitable ingredients and cooking equipment, the settlers instead covered a stewed filling with a layer of uncooked plain biscuits or dumplings, fitted together. When the dish is fully cooked, the surface looks like a cobbled street. The name may also derive from the fact that the ingredients are “cobbled” together. Some recipes resemble a thick crusted, deep-dish pie with both top and bottom crust.
Cobblers showcase seasonal fruits but are a way to used up home canned fruits. They can even glam up factory canned fruits. They are simpler to make than pies, and yet garner the same satisfying reward.
We featured caramel on National Day Flavor last week. If you have any left, or if you fancy making more, drizzle a little (a lot) over your cobbler for another layer of flavor. If you prefer maple syrup, that’s another excellent topping for this dessert. Just reduce the sugar in the recipes to avoid sweet overkill.
Ice cream goes well with cobblers summer, fall and winter.
Prepare your cobbler in individual ramekins before baking. Your effort will make your guests will feel special, and you will have elevated the humble cobbler to a whole new level.
Peach and Pineapple Upside Down Cake Recipe
1 cup (2 sticks) melted butter, divided
1 cup brown sugar
20 oz. can pineapple slices, drained with juice reserved
15 oz. can sliced peaches, drained with juice reserved
1 Tbsp. Caramel Apple Cider Mix
Absolutely Almond Pound Cake Mix
Combine ½ cup melted butter and brown sugar in a large greased slow cooker; spread evenly across the bottom. Layer pineapple and peaches on top. Sprinkle with cider mix. In large bowl, combine cake mix, ¾ cup combined reserved juice and remaining butter. Spoon batter over fruit in slow cooker. Layer 6 paper towels under the lid of the slow cooker before closing it to absorb moisture. Cover; cook on low 2-3 hours or until a toothpick inserted in the center comes out clean. Cool slightly before serving. Scoop out individual servings.
