NATIONAL OATMEAL COOKIE DAY
National Oatmeal Cookie Day is observed each year on April 30. This day is also often recognized on March 18 in conjunction with National Lacy Oatmeal Cookie Day. Oatmeal cookies have been around since the 1800s. The cookies quickly became popular, and by early the 1900s a recipe for the delicious treats appeared on containers of Quaker Oats. Oatmeal cookies are also considered a health food because they are an excellent source of iron and fiber. Just another reason to have an oatmeal cookie today!
Oatmeal, chocolate and oranges hit half of the celebrations this week. Consuming them in the right proportions with a balanced diet, and these celebrations might not be indulgent at all!

CHOCOLATE NO BAKE COOKIES
2 cups sugar
½ cup milk
½ cup peanut butter
2 tablespoons cocoa powder
½ cup butter
3 cups quick oats
In a large saucepan mix sugar and cocoa over medium heat. Add butter and bring to a boil for 60 seconds. Stir in peanut butter. Mix in oats. When incorporated, drop by spoonfuls onto wax paper and let cool.
