NATIONAL EGGS BENEDICT DAY
National Eggs Benedict Day is observed annually on April 16. It is a day set aside to enjoy poached eggs with Hollandaise sauce and Canadian bacon or ham on English muffin halves.
There are two different stories as to how Eggs Benedict came to be.
- In 1894 stock broker Lemuel Benedict ordered “buttered toast, poached eggs, crisp bacon, and a side of Hollandaise” at the Waldorf Hotel. They were so impressed with the dish that they put it on the menu substituting ham and English muffins in place of the bacon and toast.
- In the early 18th century, Pope Benedict XIII liked an egg dish so much that he requested it time and time again. It is also believed that Pope Benedict XIII had an illness which added to his desire for this particular egg dish, hence the name Eggs Benedict.

Get creative with your Eggs Benedict, once you’ve mastered the tricky part of poaching eggs. Here are a few tips to get you on your way.
The art of poaching eggs starts with fresh eggs. Older than two weeks from being laid and they are more likely to break apart when cooking.
Bring water to just simmering (not boiling).
Crack eggs into a fine mesh sieve and let rest over a ramekin for a minute.
Create a whirlpool in the water and carefully slide the egg into the water, white first.
4 thin slices of Canadian bacon
2 English muffins
½ cup butter
3 egg yolks
½ teaspoon salt
dash of paprika
To keep each element of the dish warm during preparation, preheat oven to 200° then turn off.
In a saucepan, whisk egg yolks and lemon juice together. Add half of the butter and heat over low heat, continuously whisking until butter is melted. Add remaining butter. Rapidly whisk the sauce until butter is melted and sauce thickens. Place in oven to keep warm.
Split muffins and spread with butter. Place in oven to keep warm.
Fry the slices of bacon in a skillet until brown. Set aside and keep warm.
Poach eggs. (See sidebar.)
Place a slice of bacon on each muffin half and top with egg. Spoon sauce over eggs and sprinkle with paprika.
