Name: Kickin’ Shrimp Lettuce Wraps

Add a little heat to your summer grilling with these Kickin’ Shrimp Lettuce Wraps. With a squeeze of lime, they will offer a fresh and light flavor to any meal.
1 tablespoon olive oil
1/2 teaspoon cumin
Fresh cilantro, minced
1 clove garlic, minced
1/4 teaspoon chili flakes
12 medium deveined shrimp, tails off
4 large Romaine lettuce leaves
1 avocado, cubed
8 cherry tomatoes
1 lime, quartered
Mix olive oil, cumin, fresh cilantro, garlic and chili flakes in a medium bowl. Add shrimp and toss to thoroughly coat. Marinate in the refrigerator for 10-15 minutes.
Heat grill to medium-high heat. Place shrimp on skewers. Grill 2-3 minutes on each side.
Cut cherry tomatoes in half. Divide shrimp, avocado, and tomatoes between four lettuce leaves. Serve with a wedge of lime.
