Jerk Salmon

12-16 ounce salmon filet, skin on
2 tablespoons brown sugar
2 teaspoons dried thyme
2 teaspoons cayenne pepper
1 ½ tablespoons onion powder
1 ½ tablespoon garlic powder
1 ½ teaspoon ground allspice
1 ½ teaspoons paprika
1 ½ teaspoon hot pepper flakes
2 tablespoons
1/2 yellow onion, thinly sliced
2 tablespoons olive oil
1 teaspoon lemon juice
Salt and pepper to taste


Heat oven to 375°F. Prepare a baking sheet by lining it with parchment paper.

In a small bowl, mix all the seasonings, oil, brown sugar, lime juice and onion.

Pat salmon dry and place on baking sheet. Spoon the jerk marinade over the salmon, thoroughly coating the surface.

Bake for 15 minutes followed by 5 minutes under the broiler.
