Serve this Italian Tossed Salad with any pasta meal. It also complements light fish dishes or serves as a meal all its own. Use up leftovers from your charcuterie board to pull it all together. (Who are we kidding, what leftovers from the charcuterie board?)
Ingredients:
4 cups romaine lettuce, chopped
1 cup shredded arugula
1 medium tomato, diced
1/2 red onion, sliced
1/4 cup pine nuts
1/2 cup Kalamata olives, halved
1/2 cup crumbled feta cheese
6 ounces Genoa salami, cubed
2 tablespoons Parmigiano-Reggiano
1 cup seasoned croutons
1/4 cup Italian dressing
Instructions:
In a large serving bowl, combine ingredients all ingredients and toss with Italian dressing. Season with fresh cracked pepper, if desired.
