Name: Garlic Smashed Potatoes

Ingredients:
3 lbs. Gold potatoes
6 tablespoons butter
2 cloves minced garlic
1 teaspoon smoked paprika
1 tablespoon parmesan cheese
salt and pepper to taste
1/2 tablespoon chives, diced
Instructions:
Quarter potatoes leaving skins intact and place in a stockpot. Cover with water and season with salt. Bring to a boil over medium-high heat. Let boil until potatoes are tender.
Drain potatoes and place in a large serving bowl. Smash potatoes with a fork or potato masher. Mix in butter, garlic, smoked paprika, parmesan cheese, salt, and pepper. Garnish with chives and serve hot.
