1/2 pound macaroni noodles
1/4 cup butter
3 tablespoons all-purpose flour
3 cups milk
2 1/2 cups shredded cheddar cheese
1/4 teaspoon pepper
1 teaspoon salt
1 cup frozen corn
1/2 cup green peppers, diced
10 ounce can diced tomatoes with green chilis
1/2 cup sour cream
Tortilla chips for garnish

Instructions:

Heat oven to 325F. Grease a 3 quart baking dish.

In a saucepan, bring water to boil. Add pasta and salt. Cook until al dente and drain.

In a large skillet, melt butter over medium heat.

Stir with a whisk until the flour turns a golden brown, approximately 1-2 minutes.

Add the milk and continue to whisk, removing any lumps.

Add salt and pepper.

Cook over medium heat until sauce thickens and begins to bubble.

Add cheese, reserving 1/4 cup. Stir until melted and smooth. Remove from heat.

Add cooked pasta, corn, peppers and diced tomatoes.

Spoon mixture into prepared baking dish. Bake 20-25 minutes or until browned.

Top with remaining cheese and broil 1-2 minutes to brown. Watch closely so as not to burn the cheese.

Garnish with sour cream and tortilla chips.
