Easy Tortellini Soup

2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, minced
1 lb Italian sausage
1 tablespoon Italian seasoning
3 1/2 cups vegetable or chicken broth
2 14-ounce can diced tomatoes, undrained
1 15 – ounce can of great northern beans, drained
9-ounce package of cheese tortellini
5 cups kale, torn into pieces
1/4 cup shaved parmesan cheese
Fresh basil for garnish
In a large stockpot, heat oil over medium heat. Add onion and cook until translucent. Add garlic and cook until fragrant, about 1 minute. Crumble sausage into the pot and season with Italian seasoning.
In a large saucepan, bring water 3-4 quarts of salted water to a boil. Add tortellini and cook until al dente. Drain and add tortellini and kale to the soup. Bring to a simmer.
Remove from heat and season with salt and pepper to taste.
Serve with shaved parmesan and fresh basil as garnish.
