Name: Easy Pickled Zucchini Ribbons

2 medium zucchinis
1/2 red onion
1/4 cup apple cider vinegar
2 clove garlic, minced
2 teaspoons honey
1/4 cup olive oil
2 tablespoons fresh dill, chopped
Salt to taste


Using a vegetable peeler, thinly slice zucchinis lengthwise. Thinly slice the red onion.

In a medium bowl, mix cider, garlic, honey, oil, and dill. Toss vegetables into the mixture. Salt to taste.

Allow to chill for 1 hour.
