Dilly Roasted Potatoes

Name: Dilly Roasted Potatoes

Servings: 4-6

 

Ingredients:

1-2 tablespoons olive oil
2 cloves garlic, minced
1/2 tablespoon dried dill
2 1/2 pounds Yukon gold potatoes
salt and pepper to taste
Fresh dill for garnish (optional)

Instructions:

Heat oven to 425°F.

In a large bowl, mix oil, garlic, and dill.

Wash and cube potatoes leaving skins on. Add to oil mixture and toss to thoroughly coat.

Spread potatoes on a baking sheet in a single layer. Add salt and pepper.

Roast on top rack for 20-25 minutes. Top with fresh dill and serve hot.
