NATIONAL STRAWBERRY RHUBARB PIE DAY
On June 9th of each year, National Strawberry Rhubarb Pie Day is observed. A tart vegetable, rhubarb is often paired with sweet fruits making for a delicious dessert.
Around the country, rhubarb is a perennial favorite for home gardens. One of the first fruits of their labors, gardeners begin to harvest rhubarb in the middle of May and early June, and it finds its way into desserts and preserves. Since it takes on the flavor of the fruit or vegetable it is paired with, it is an excellent compliment to many recipes.
Not only is rhubarb known for making deliciously baked goods and satisfying the hankering for something from the garden early in the season, but it also has many other qualities. Rub a cut stalk of rhubarb over a burnt skillet and let the high oleic acid content do the work. It’s been a primary ingredient in many cleansers for over a 100 years.
Rhubarb is so high in oleic acid, in fact, the leaves are toxic to humans. The stalks, however, are a consumable, rich and healthful source of oleic acid. The benefits of enjoying rhubarb could help reduce blood pressure, increase your body’s ability to burn fat and generate brain myelin. Now, that’s a reason to celebrate National Strawberry Rhubarb Pie Day!
This time of year a pinch of fresh herbs from a pot on the patio or balcony is much easier to come by, but there are many that can be grown indoors all year round. In honor of National Herbs and Spices Day, here are three that can do well in a sunny window at home.
- Chives – They can be started from seed and grow continuously. Trim with sheers, use fresh and dry extra.
- Rosemary – When planted in well-drained soil and kept in a sunny window, this herb thrives!
- Thyme – This fragrant herb will also require well-drained soil and lots of light, but will supply beauty and flavor.
Strawberry Rhubarb Pie
3 cups sliced strawberries
3 cups sliced rhubarb
1 ½ cups sugar
¼ cup instant tapioca
1 tablespoon fresh lemon juice
2 pie crusts
2 tablespoons chilled butter, cubed
1 large egg
1 tablespoon milk
Preheat oven to 400°F.
In a medium bowl, mix strawberries, rhubarb, sugar, tapioca and lemon juice. Let stand for 15 minutes, stirring occasionally. Press bottom crust into pie pan and then pour in filling. Add top crust, sealing edges. Vent the top of the pie with a sharp knife.
Beat egg and milk together. Lightly brush egg wash over crust. Sprinkle with sugar (optional).
Fold foil or place pie shield over edges of the crust for the first 20 minutes of baking to prevent burning. Reduce temperature to 350°F and remove foil or shield and bake an additional 25-30 minutes.
