Quick Pineapple Upside Down Cake
Prep: 20 minutes
Cook: 50 minutes
Total Time: 1 hr. 10 mins.
Serves 12 – 15

Ingredients:
1 can pineapple rings
1 jar maraschino cherries
1 box yellow cake mix
1 cup brown sugar
1 stick butter
Instructions:
Preheat oven to the temperature required on the cake box.
Drain and save the juice from canned pineapple rings.
Use pineapple juice in mixing the cake and be sure to adjust liquids accordingly.
Grease the bottom and sides of a 9 x 13 cake pan, melt butter, and pour into the pan.
Next place crumbled brown sugar into the butter.
Place pineapple rings and cherries over brown sugar in the bottom of the cake pan.
Pour cake mix over everything and bake according to time on the cake box.
Once baked and out of the oven, place on a serving plate upside down over the pan and turn over both plate and pan together.
Leave the pan remaining over the cake to allow the brown sugar mixture to drizzle over the cake.
Carefully remove the pan and serve your pineapple upside-down cake warm.

1912
Both Boston’s Fenway Park and Detroit’s Navin Field open. The Red Sox win over the New York Highlanders 7-6 and the Tigers defeat the Cleveland Naps 6-5. Both games stretched into 11 innings.
1916
The Chicago Cubs played their first game at Weeghman Park (later renamed Wrigley Field). After three hours and 11 innings, the Cubs brought home a 7-6 win over the Cincinnati Reds.
2006
Joe Carlucci set a world record when he tossed about 20 ounces of pizza dough 21 feet 5 inches into the air. He set the record at the Mall of America in Minneapolis, Minnesota. Check out these other pizza world records.

Mary Abigail Kawena Pukui – 1895
Author of numerous scholarly books, Kawena Pukui, translated chants, folktales, and the Hawaiian culture for anthropologists. Her expertise provided a wealth of valuable information and preserved Hawaiian history and knowledge.
Tito Puente – 1923
The bandleader is known for popularizing Latin jazz music in the United States. During his career, he won 6 Grammy Awards and recorded over 100 albums. He also earned several nicknames including “The King of Latin Music.”
George Takei – 1937
The American author and actor is best known for his role as Hikaru Sulu in the television and movie series Star Trek.
Jessica Lange – 1949
Jessica Lange has earned multiple Academy and Emmy Awards and a Tony Award in a career spanning four decades on both stage and screen. As a result, she is one of only 13 actresses to accomplish the Triple Crown of acting.
Luther Vandross – 1951
The legendary eight-time Grammy Award-winning performer came to prominence in the 1980s with songs like “Never Too Much” and “The Night I Fell In Love.”
